Pam my sister asked me the same question yesterday. I really donβt think that I have the necessary skills to paint a realistic animal yet, unlike you who knocks it out of the park every time! Not even sure how to attempt it, would I sketch it on canvas and paint it in?
I always sketch my animals basic outline, eyes, nose etc first before painting. When I was young, I was not very successful trying to paint my sketched animals. But I think it is because I used acrylics in my teens. Oils have made all the difference. I think every artist has there own preferred steps/style to painting portraits (animals or people) It takes a lot of layers with my technique. See my painting Sinoceratops for thumbnails of stages as an example. You just have to go for it!

FYI - My first several layers are very thinned with odorless paint thinner, building to thickest layers (more opaque) at the end.
