I had a TERRIBLE time trying to get the paint to break on this one. There wasn’t too much paint for the mountain itself. Titanium White was plenty firm, and I used very little pressure. It was like the canvas just wouldn’t take the paint. Frustrating.
Such a late feedback and I do not know if it is still applicable. I struggle with mountains too. Still cannot figure them out. But sounds you did everything perfect. One thing that may be needed - holding knife with just two fingers and keeping it as much parallel to the canvas surface as possible.

I can safely say I know what that frustration feels like! I wrote an article discussing tips for making that white paint break when I finally started to get it. Maybe it would help. I will link it here: https://www.twoinchbrush.com/articles/making-the-snow-break-on-the-mountain-important-discoveries
